Asado de Carajay

Grandpa took up cooking lessons with a Spanish chef. Poqueta, my grandmother, probably improvised this recipe by adding soy sauce. I added a little of my own (a dash of clove powder) after I found out that the recipe is very similar to sauerbraten. I always get good feedback from those who got to try it! But first Hey, use your common sense because these measurements are estimates. I never measure!


Asado de Carajay Ingredients:
2 pcs. ox tongue
1 kilo pork
3 tbsps. toyo
1 cup vinegar
2 onions, quartered
1 tbsp. paprika
2 whole chicken
1 bay leaf
grains of black pepper
salt to taste
1 can mushrooms
1/2 kilo potatoes, quartered
2 tbsps. flour
water enough to make tongue and pork tender.


Method
- Cook the chicken with the pepper, salt, garlic, bay leaf, and vinegar.
- When the mixture is dry, add paprika and continue cooking until meat is brown.
- Add the water and cook chicken until tender.
- Add tomatoes and onions.
- Continue simmering a few minutes, or until almost dry

Ginataang Manok

Ginataang Manok means chicken stewed in coconut milk. This is a simple Filipino dish wherein chicken is sautéed in garlic, onion, and ginger then stewed in coconut milk. A more traditional approach requires native hen (usually grown in the backyard). It is much tastier compared to broiler chickens and adds more flavor to the dish. Many Filipino's loves this kind of recipes.

Ingredients

3 tablespoons canola oil
1/2 cup sliced fresh ginger
1 (5 pound) whole chicken, cut into pieces
salt and ground black pepper to taste
2 (14 ounce) cans coconut milk
1 (10 ounce) package frozen chopped spinach, thawed and drained

Ginataang Manok Cooking Instruction:
In a frying pan, fry chicken meat until golden brown.
Saute onion, garlic and ginger.
Add the chicken meat and red bell pepper. Mix well.
Add coconut milk and simmer until chicken is tender.
When chicken meat is tender, add the spinach. Salt and pepper to taste.
Simmer for few minutes and serve.

Fried chicken kebabs with chilli garlic sauce

Today, the dipping sauce way outshone the chicken.
I made asparagus in the skillet to serve next to the chicken tenders.
I dipped the asparagus into the dipping sauce and that, is where my planned evening went awry.

INGREDIENTS

500g chicken thigh fillets
1 teaspoon grated fresh ginger
2 tablespoons light soy sauce
1 tablespoon dry sherry
cornflour
oil for shallow-frying
Chilli garlic sauce
½ cup light soy sauce
1/3 cup dry sherry
1 small fresh red chilli, finely chopped
2 cloves garlic, sliced

Instructions
Cut the chicken breasts into equal strips size strips or nuggets
Combine chicken, buttermilk and seasonings into a dish or ziplock baggie, seal/cover and refrigerate for 3 to 5 hours
Mix 2 C flour and 1 Tbsp seasoning in a shallow dish and set aside
Remove chicken from fridge
Dredge chicken through flour (for a super thick crispy skin, dredge through flour, dip back into buttermilk and dredge through flour again) and set aside, repeat this step with all strips
Pour oil into a cast iron skillet or dutch oven, about 2 inches deep.
Heat to 350 (yes, this needs to be exact)
Fry chicken about 5 pieces at a time, this takes about 5 or 6 minutes, turn halfway through until chicken is golden brown on each side.
Lay to drain on a draining rack/cookie cooling rack placed over newspaper or paper towels to cool and drain
Serve with favorite dipping sauce

Chicken Asado

Hey Guys and to all Food Lovers theirs a Chicken Asado or Asadong Manok is a bit different with pork asado. This asadong manok recipe will have a mixture of tomato sauce. It was kind of similar to chicken afritada.

Ingredients:

1 k. chicken, cut into serving pieces with the bones intact
1/4 cup kalamansi juice
1/4 cup soy sauce
1 cup tomato sauce
2 medium size onion, chopped
1/2 head garlic, minced
4 potatoes, quartered
3 pc. bay leaf
salt and pepper
cooking oil


Chicken Asado Recipe Cooking Instructions:

1). Marinate chicken with kalamansi, soy sauce, salt and pepper for 10-20 minutes in a clean bowl.

2). In a sauce pan fry chicken for 3-5 minutes or until colour turn to golden brown in batches.

3). Remove from pan, set aside. In same sauce pan sauté garlic and onion, add in chicken, stir fry for 2-3 minutes.

4). Add tomato sauce and bay leaf, stir cook for 1-2 minutes.

5). Pour in 2-3 cups of water and simmer for 10-15 minutes.

6). Add in potato and simmer for another 5-10 minutes or until chicken and potato are cooked and tender and until most of the liquid has evaporated.
